Pineapple Chicken

Directions

  1. 1Open and drain a can of pineapple chunks, reserving the juice.
  2. 2Dice up chicken into bite size pieces.
  3. 3Put diced chicken into a mixing bowl.
  4. 4Add garlic powder, onion powder, salt, and pepper to the chicken.
  5. 5Crack two eggs into the bowl.
  6. 6Mix the chicken with tongs.
  7. 7Sprinkle in about ⅓ cup cornstarch and mix to create a batter.
  8. 8To the reserved pineapple juice, add garlic, hoisin sauce, mirin, oyster sauce, ginger, dark soy sauce, regular soy sauce, dehydrated minced onion, and MSG.
  9. 9Stir the sauce ingredients together.
  10. 10Add some neutral oil to a skillet.
  11. 11Drop the chicken into the hot oil, piece by piece.
  12. 12Shallow fry the chicken until it is golden brown on all sides, tossing it around a few times.
  13. 13Remove the chicken and put it on a paper towel lined plate.
  14. 14Dispose of the excess oil.
  15. 15Add a hefty tablespoon of cornstarch to the sauce and stir until fully incorporated.
  16. 16Add the sauce to the pan.
  17. 17Whisk the sauce.
  18. 18Add pineapple and a little water.
  19. 19Dump chicken into the pan.
  20. 20Toss the chicken so that everything is fully coated in that delicious pineapple sauce.

Tips

  • You can use fresh pineapple but canned pineapple comes with juice for the recipe.
  • For the best results, add cornstarch to cool liquids to prevent it from clumping.
