Directions

  1. 1Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Add sliced red onion and sauté for 2-3 minutes.
  2. 2Add ground beef, breaking it apart with a spatula. Cook for 5-7 minutes, until browned. Drain excess fat.
  3. 3Stir in minced garlic, sliced zucchini, and bell peppers. Cook for 3-4 minutes until softened.
  4. 4Sprinkle in ground cumin, smoked paprika, oregano, salt, and pepper. Stir well.
  5. 5Mix in halved cherry tomatoes and sliced Kalamata olives. Cook for 2 minutes.
  6. 6Remove from heat, drizzle with lemon juice, and garnish with parsley and feta cheese.
  7. 7Serve hot over rice, quinoa, couscous, or cauliflower rice; or in pita or lettuce wraps
