1Cut up chicken thighs into bite-sized pieces and add them in a crockpot.
2In a separate bowl, add ½ cup of soy sauce, 1 tablespoon of sesame oil, ¼ cup of rice vinegar, ¼ cup of hoisin sauce, ⅓ cup of brown sugar, 1 tablespoon of minced garlic, and ¼ teaspoon of ground ginger.
3Whisk it all together and pour over your chicken.
4Set your crockpot on high for two to three hours.
5Once it's done, in a separate bowl, mix together 1 tablespoon of cornstarch and 2 tablespoons of water and pour into the crockpot.
6Add in some red pepper flakes and serve over rice.
