In a dry grinder, add all the ingredients.
7Grind to a fine powder without adding water.
8Transfer to an airtight container and store in the fridge.
9To use, mix with water as needed to make fresh green chutney instantly.

200 g tamarind
2 cups jaggery powder
2 tsp black salt
2 tsp chaat masala
2 tsp roasted cumin powder
2 tsp red chili powder
0.25 cup mint leaves
0.5 cup coriander leaves
1 cup roasted Bengal gram
3 green chilies
1 inch ginger
1 tsp citric acid
2 tsp salt
Tips
For Imli ki Chutney: • Use fresh brown tamarind for the best flavor. • Remove strings and seeds before drying. • Once fully crispy, grind it immediately. • If there’s still moisture, grind it once, dry it again, and then re-grind.
For Green Chutney: • Finely chop green chilies before drying. • Fan-dry chilies and other ingredients for at least an hour before grinding.
