Directions

  1. 1For imli chutney pre-mix: Sun-dry the tamarind completely for two days.

  • 200 g tamarind
  • 2 cups jaggery powder
  • 2 tsp black salt
  • 2 tsp chaat masala
  • 2 tsp roasted cumin powder
  • 2 tsp red chili powder
  • 0.25 cup mint leaves
  • 0.5 cup coriander leaves
  • 1 cup roasted Bengal gram
  • 3 green chilies
  • 1 inch ginger
  • 1 tsp citric acid
  • 2 tsp salt

Tips

  • For Imli ki Chutney: • Use fresh brown tamarind for the best flavor. • Remove strings and seeds before drying. • Once fully crispy, grind it immediately. • If there’s still moisture, grind it once, dry it again, and then re-grind.
  • For Green Chutney: • Finely chop green chilies before drying. • Fan-dry chilies and other ingredients for at least an hour before grinding.
