4Prepare the rice by combining olive oil spray, garlic, white onion, chicken broth, tomato paste, cumin, and onion powder in a saucepan. Bring to a simmer, add rice, cover, and remove from heat for 10 minutes.
5Make the queso sauce by combining nacho cheese, chicken broth, evaporated milk, reduced-fat cheddar, jalapeño, salt, and cream cheese in a pan. Stir until melted and smooth.
6Combine shredded chicken, rice, and queso sauce in a bowl. Mix well.
7Place a small amount of cheese on each tortilla, add the chicken mixture, and roll up to form burritos.
