1Make the dough using flour, avocado oil shortening and water. Divide the dough into 6 equal pieces, flatten each piece and cook on a skillet.
2Prepare the birria by chopping the onion and garlic. Season the beef with salt and pepper. Add cumin seeds, black peppercorns and cinnamon sticks to a pan and toast lightly. Add the dried chilies.
3Cook the beef with avocado oil in a pot until it's browned. Then remove the beef from the pot and set it aside.
4In the same pot, sauté onions and garlic. Add beef broth, salt, and the spice mixture, add the beef, and let it simmer.
5Blend the mixture and strain it. Shred the beef.
6Assemble the quesadilla by placing a tortilla in a skillet, top it with cheese, add the shredded birria, and cover with another tortilla.
7Cook the quesadilla until cheese is melted and tortilla is golden brown. Cut and serve with onion, cilantro and birria broth on the side.
