Easy Mexican Chicken and Rice Casserole

Directions

  1. 1Add two bags of Knorr Spanish rice to a casserole dish.
  2. 2Add one entire container of chicken broth to the rice.
  3. 3Add two tablespoons of vegetable oil to the rice and broth mixture.
  4. 4Add one can of drained black beans to the mixture.
  5. 5Put on latex gloves to handle raw chicken.
  6. 6Trim two large chicken breasts into bite-size pieces using kitchen scissors.
  7. 7Pat the chicken dry with a paper towel.
  8. 8Add one container of taco seasoning on top of the cut chicken.
  9. 9Mix the taco seasoning into the chicken by hand, ensuring every piece is coated.
  10. 10Dump the seasoned chicken into the broth and rice mixture, making sure it's all dropped in on top.
  11. 11Remove gloves.
  12. 12Use a spurtle to submerge all the chicken and ensure the rice is fully covered by the chicken broth.
  13. 13Add one 16 oz jar of your favorite salsa on top of the mixture.
  14. 14Cover the casserole dish with foil or a lid.
  15. 15Bake in a preheated oven at 375°F for about 45 minutes until the rice is cooked and chicken is done.
  16. 16After 45 minutes, drizzle about a fourth of a cup of spicy queso blanco on top of the cooked casserole.
  17. 17Use a spurtle to mix up the cooked chicken and rice, scraping the sides.
  18. 18Add a little bit more queso on top.
  19. 19Cover the entire casserole with about two cups of Mexican blend shredded cheese.
  20. 20Add jalapeño wheels to one half of the casserole if desired.
  21. 21Throw the casserole back in the oven uncovered for about 10 minutes until the cheese is melted.
  22. 22Serve the casserole.
