Start with a whole head of garlic and roughly chop it.

Thinly slice a large shallot using a mandoline.

In a separate bowl, combine gochugaru, chili flakes, shiitake mushroom powder, optional MSG, sugar, and grated ginger.

In a small pot, add neutral oil, garlic, and shallots; slowly bring the heat up to 350°F.

Once the garlic and shallot are golden, carefully strain them.

Bring the oil back up to temperature and pour it over the spices.

Add soy sauce and rice vinegar.

Add toasted sesame seeds.

Once cooled, add the fried garlic and shallots.

Mix well and transfer to a mason jar.

10 cloves Garlic
1 large Shallot
2 ⅔ cup Gochugaru
2 ⅔ cup Chili Flakes
2 inch knob Ginger
2 tsp Shitake Mushroom Powder
2 tbsp Sugar
2 tsp MSG
2 tbsp Rice Vinegar
2 tbsp Soy Sauce
1 Toasted Sesame Seeds
