Directions

  1. 1Combine 3/4 of a firm tofu, 1/2 cup of any milk, 2 teaspoons of peanut butter, 1 tablespoon of toasted sesame seeds, brown sugar, and salt in a blender.
  2. 2Add about 1/4 cup of water to thin the mixture.
  3. 3Blend until smooth.
  4. 4Do a taste test and add more brown sugar or salt to your liking.
  5. 5Chill the broth in the fridge.
  6. 6Cook somen noodles as per package instructions.
  7. 7Drain the noodles and run them under cold running water.
  8. 8Pour the creamy broth over the noodles.
  9. 9Drizzle sesame oil over the noodles.
  10. 10Garnish with sliced cucumbers and apples.
  11. 11Finish off with sesame seeds.
