Lauki Kofta Curry

Directions

  1. 1Grate the lauki into a strainer, add salt, and let it rest for 5 minutes.
  2. 2Squeeze out all the water from the grated lauki.
  3. 3Transfer the squeezed lauki to a bowl and add grated paneer, chopped coriander, chopped green chilli, chopped onions, and basic Indian masalas.
  4. 4Add roasted besan to the mixture.
  5. 5Mix all the kofta ingredients well.
  6. 6Shape the mixture into koftas.
  7. 7Place the koftas in an air fryer with very little oil.
  8. 8Air fry the koftas until they turn super crispy, which will take around 12 to 15 minutes.
  9. 9In a pan, add oil and jeera.
  10. 10Add ginger, garlic, onions, and Kashmiri red chillies to the pan.
  11. 11Add chopped tomatoes and cashews to the pan.
  12. 12Add basic Indian masalas and water.
  13. 13Cook the mixture for 15 minutes with a lid on.
  14. 14Grind the cooked mixture into a smooth puree.
  15. 15Add the crispy lauki koftas to the gravy.

  • 3 tbsp roasted besan
  • 1 tsp Salt
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp oil
  • 1 tsp jeera
  • Ginger
  • garlic
  • 2 onions
  • 2 Kashmiri red chillies
  • 4 tomatoes
  • 8 cashews
  • Water
  • 1 tsp kitchen king masala
