Directions

Remove the pits from the dates and pour boiling water over them. Let it steep for approximately 20 minutes.

Blend the dates until smooth.

Preheat the oven to 180ºC/160ºC Fan and prepare a baking dish.

In a bowl, combine unsalted butter, sugar, eggs, self-raising flour, baking powder, bicarbonate of soda, and golden syrup. Mix until combined.

Add the date mixture and milk, stir until smooth.

Pour batter into the prepared baking dish and bake for 35-40 minutes or until a skewer comes out clean.

While baking, prepare the sauce by combining all sauce ingredients in a saucepan and heating until the sugar dissolves and butter melts.

Bring to a boil and stir for 1-2 minutes until slightly thickened.

Pour most of the sauce over the baked pudding.

Serve the pudding with ice cream and drizzle remaining sauce on top.
