Preheat the oven to 160°C fan.

Add 200 grams of self-raising flour to a bowl.

Add 80 grams of custard powder or cornflour to the bowl.

Add 1 teaspoon of baking powder to the bowl.

Add 120 grams of icing sugar to the bowl.

Add 200 grams of very soft butter to the bowl.

Add 5 eggs to the bowl.

Add 1 tablespoon of vanilla extract to the bowl.

Mix all the ingredients well.

Add 400 grams of poached and cooled bramley apples to the mixture.

Incorporate the apples into the mixture.

Pour the mixture into a parchment-lined 23x33cm tray.

Bake in a 160°C fan oven for between 30 and 40 minutes.

1 tablespoon vanilla extract
400 grams poached and cooled bramley apples

Tips
This recipe has very little sugar, but you can increase the sugar if you prefer a sweeter flavor.
You can use cornflour if you don’t have custard powder.
The tray bake can be frozen.
Cooked apples should still have their shape when incorporated into the batter.
It can be enjoyed plain, warm with ice cream, or with custard.
