Apple & Custard Traybake

Directions

  1. 1Preheat the oven to 160°C fan.
  2. 2Add 200 grams of self-raising flour to a bowl.
  3. 3Add 80 grams of custard powder or cornflour to the bowl.
  4. 4Add 1 teaspoon of baking powder to the bowl.
  5. 5Add 120 grams of icing sugar to the bowl.
  6. 6Add 200 grams of very soft butter to the bowl.
  7. 7Add 5 eggs to the bowl.
  8. 8Add 1 tablespoon of vanilla extract to the bowl.
  9. 9Mix all the ingredients well.
  10. 10Add 400 grams of poached and cooled bramley apples to the mixture.
  11. 11Incorporate the apples into the mixture.
  12. 12Pour the mixture into a parchment-lined 23x33cm tray.
  13. 13Bake in a 160°C fan oven for between 30 and 40 minutes.

Tips

  • This recipe has very little sugar, but you can increase the sugar if you prefer a sweeter flavor.
  • You can use cornflour if you don’t have custard powder.
  • The tray bake can be frozen.
  • Cooked apples should still have their shape when incorporated into the batter.
  • It can be enjoyed plain, warm with ice cream, or with custard.
