Tennessee Onion Tortellini

Directions

  1. 1Preheat the oven to 375 degrees F (190 degrees C).
  2. 2Lightly grease a 3-quart baking dish.
  3. 3Slice 3 sweet onions thinly and place them in a baking dish.
  4. 4Toss the onions with a little olive oil.
  5. 5Add butter to the onions.
  6. 6Sprinkle with Cajun seasoning, paprika, and oregano.
  7. 7Bake the onions at 375 degrees F for about an hour, stirring every 20 to 30 minutes, until softened and caramelized.
  8. 8Meanwhile, bring a pot of salted water to a boil.
  9. 9Add tortellini and cook for 3 minutes; drain.
  10. 10Remove onions from the oven and increase oven temperature to 400 degrees F (200 degrees C).
  11. 11Stir in French onion dip until well combined.
  12. 12Add tortellini and broth; stir until well combined.
  13. 13Top with white Cheddar cheese and Parmesan cheese.
  14. 14Return to the oven and bake for about 20 to 25 minutes, or until browned and bubbly.
  15. 15Finish it off with a little fresh parsley.
  16. 16Serve and garnish with more parsley and freshly cracked pepper.
