Loaded Seafood Mashed Potatoes

Directions

  1. 1Peel two Russet potatoes.
  2. 2Rinse the peeled potatoes and slice them into small pieces.
  3. 3Add chicken bouillon to water in a pot.
  4. 4Add the sliced potatoes to the chicken bouillon water and boil until fork-tender.
  5. 5Place bacon strips on a parchment-lined baking sheet and bake in the oven at 400 degrees Fahrenheit for 10-12 minutes.
  6. 6Season shrimp with Chosen seasoning, Old Bay, and Tony's no salt seasoning.
  7. 7In a pan, add butter, minced garlic, and shallots.
  8. 8Add the seasoned shrimp to the pan and cook until fully cooked.
  9. 9Add lobster meat to the pan with the shrimp and cook until fully cooked.
  10. 10Remove the cooked shrimp and lobster from the pan.
  11. 11To the same pan, add more butter, garlic, and shallots.
  12. 12Add crab meat and the remaining lobster meat to the pan.
  13. 13Season with Old Bay seasoning.
  14. 14Pour in heavy whipping cream.
  15. 15Add half a Boursin garlic & herb cheese.
  16. 16Squeeze in the juice of one full lemon.
  17. 17Add Parmesan cheese to the sauce.
  18. 18Season the sauce with salt and pepper to taste.
  19. 19Pour the cooked potatoes into a large mixing bowl.
  20. 20Add the prepared sauce to the potatoes.
  21. 21Add bacon and green onions to the potatoes and sauce.
  22. 22Mash the potatoes until smooth.
  23. 23Stir the mashed potatoes to combine all ingredients.
  24. 24Scoop a layer of mashed potatoes into an aluminum pan.
  25. 25Add some cooked shrimp in the middle of the mashed potatoes.
  26. 26Add a layer of triple cheese on top of the mashed potatoes and shrimp.
  27. 27Bake in the oven until the cheese is nice and bubbly.
  28. 28Pour more sauce over the baked mashed potatoes and cheese.
  29. 29Top with the remaining cooked shrimp, lobster, bacon, and green onions.
  30. 30Drizzle with additional sauce.
