Finely chop one yellow bell pepper.

Finely chop one green bell pepper.

Finely chop one red bell pepper.

Finely chop eight garlic cloves.

Finely chop one medium red onion.

Place all chopped vegetables into a large bowl.

Add parsley to taste.

Add one teaspoon of oregano.

Add one teaspoon of salt.

Add a good pinch of black pepper.

Mix well so all the flavors come together.

Transfer the mixture into a clean jar, pressing it down lightly.

Pour in enough extra virgin olive oil to completely cover the vegetables.

Seal the jar.

Let it rest for at least 24 hours.

Tips
Let the marinade rest for at least 24 hours to allow the oil to absorb the flavors of the peppers, garlic, and herbs.
