Smoky cottage cheese and walnut cutlets

Directions

  1. 1Combine paneer, potatoes, walnuts, and capsicum with salt and pepper.
  2. 2Place a live coal in a small metal bowl inside the mixture, drizzle a little bit of ghee over it, and cover for 15-20 minutes to smoke the mixture.
  3. 3For the sauce, heat one tablespoon of ghee in a pan.
  4. 4Add one teaspoon of ginger and garlic paste each and sauté for a minute.
  5. 5Add turmeric powder and red chilli powder.
  6. 6Add yogurt and mix well.
  7. 7Add almond paste and mix.
  8. 8Add kasuri methi powder, garam masala powder, and chaat masala.
  9. 9Continuously cook and stir the sauce for at least five minutes until it comes to a boil.
  10. 10Add salt to taste and continue stirring for another five minutes.
  11. 11Shape the smoked mixture into small cutlets or tikkis.
  12. 12Heat a tablespoon of ghee in a frying pan.
  13. 13Coat each cutlet with garlic crumbs/breadcrumbs.
  14. 14Shallow-fry the cutlets in ghee until golden brown on both sides.
  15. 15Serve the cutlets hot with the prepared sauce and garnish with sliced onions.
