Combine paneer, potatoes, walnuts, and capsicum with salt and pepper.

Place a live coal in a small metal bowl inside the mixture, drizzle a little bit of ghee over it, and cover for 15-20 minutes to smoke the mixture.

For the sauce, heat one tablespoon of ghee in a pan.

Add one teaspoon of ginger and garlic paste each and sauté for a minute.

Add turmeric powder and red chilli powder.

Add yogurt and mix well.

Add almond paste and mix.

Add kasuri methi powder, garam masala powder, and chaat masala.

Continuously cook and stir the sauce for at least five minutes until it comes to a boil.

Add salt to taste and continue stirring for another five minutes.

Shape the smoked mixture into small cutlets or tikkis.

Heat a tablespoon of ghee in a frying pan.

Coat each cutlet with garlic crumbs/breadcrumbs.

Shallow-fry the cutlets in ghee until golden brown on both sides.

Serve the cutlets hot with the prepared sauce and garnish with sliced onions.
