2Apply a little mustard oil and roast them well until the skin becomes completely black and the tomatoes become soft.
3Once you have roasted the tomatoes, cover them in a bowl so that they become soft and you can easily remove the skin.
4Remove the skin, cut them and discard the eyes of the tomatoes.
5Roughly chop the tomatoes.
6Heat a pan and add some green chillies, a lot of garlic and coriander stems.
7Dry roast all these things until they get a little colour.
8Once you have dry roasted them, remove the top of the chillies and add them to a mixer grinding jar and make a coarse paste just like we make the Thecha in Maharashtra.
9Take some mustard oil in a pan, once the oil is smoked, add cumin seeds and mustard seeds to it and let it crackle.
10Add curry leaves, the paste that we made earlier, and chopped onions.
11Cook this tempering well until it gets a beautiful aroma of mustard seeds, cumin seeds and curry leaves.
12Add a little turmeric and Kashmiri red chilli powder for the kick and the color.
13Mix it well and add mashed tomatoes, salt to taste, a little black salt and a little sugar to balance the flavours.
14Mix everything and cook it for 1-2 minutes.
15Add some garam masala and a lot of fresh chopped coriander.
