4To the same flour mixture, add some potato or corn starch, a sprinkle of baking powder, and more of the same herbs and spices.
5For the wet batter, start with some buttermilk, splash in lots of your favorite hot sauce, and reinforce all the seasonings.
6Prepare three stations for frying: dried out chicken thighs, wet batter, and seasoned dry batter.
7Heat oil to 350 degrees Fahrenheit.
8Fry the chicken thighs.
9As soon as the chicken is done, hit them with a slice of cheese.
10Quickly toast the brioche buns.
11Spread hot mayo on the toasted brioche bun.
12Add a trio of pickles to the bun.
13Place the fried chicken on the bun.
14Crown the sandwich with more sauce and the top bun.
