Directions

  1. 1Take white pearl onions and make a small slit through the root of each.
  2. 2Boil water in a pot, turn off the heat, and add the slit onions to sit for 2 to 3 minutes.
  3. 3While onions sit, rub a little oil on the chuck roast.
  4. 4Season the chuck roast with Dan-O's original, spicy, and Primo seasonings on both sides.
  5. 5Strain the onions after they have sat for 2 to 3 minutes.
  6. 6Cut the tip off each onion and squeeze the cut part into your hand to remove the shell.
  7. 7Season the shelled onions with Dan-O's Primo, original, and spicy seasonings.
  8. 8Add one can of beefy mushroom Campbell soup, two cups of beef stock, and a third of a cup of Worcestershire sauce to the pot with the onions.
  9. 9Add a second can of beefy mushroom Campbell soup to the mixture.
  10. 10Put a lid on the pot and bring the mixture to a boil.
  11. 11Heat grape seed oil in a cast iron pan until nice and hot.
  12. 12Sear the chuck roast in the hot pan for about 1 to 1.5 minutes on each side.
  13. 13Transfer the seared chuck roast into an Instant Pot.
  14. 14Add 1 pound of sliced mushrooms to the Instant Pot.
  15. 15Add the broth mixture with onions to the Instant Pot.
  16. 16Add the second pound of mushrooms on top of everything in the Instant Pot.
  17. 17Close and cook in the Instant Pot for 2.5 hours.
  18. 18Vent the Instant Pot after 2.5 hours.
  19. 19Scoop out all the solids (meat, onions, mushrooms) from the Instant Pot and set aside.
  20. 20Strain the remaining liquid through a strainer to get beef juice for gravy.
  21. 21Prepare mashed potatoes.
  22. 22Mix cornstarch with a little water to create a slurry.
  23. 23Bring the beef juice to a boil, then reduce to a low simmer, ensuring no clumps.
  24. 24While stirring the beef juice, slowly pour in the cornstarch slurry until desired thickness.
  25. 25Turn off the heat once the gravy is thickened.
  26. 26Serve a hunk of meat, onions, mushrooms, and gravy over mashed potatoes.

Tips
