Take white pearl onions and make a small slit through the root of each.

Boil water in a pot, turn off the heat, and add the slit onions to sit for 2 to 3 minutes.

While onions sit, rub a little oil on the chuck roast.

Season the chuck roast with Dan-O's original, spicy, and Primo seasonings on both sides.

Strain the onions after they have sat for 2 to 3 minutes.

Cut the tip off each onion and squeeze the cut part into your hand to remove the shell.

Season the shelled onions with Dan-O's Primo, original, and spicy seasonings.

Add one can of beefy mushroom Campbell soup, two cups of beef stock, and a third of a cup of Worcestershire sauce to the pot with the onions.

Add a second can of beefy mushroom Campbell soup to the mixture.

Put a lid on the pot and bring the mixture to a boil.

Heat grape seed oil in a cast iron pan until nice and hot.

Sear the chuck roast in the hot pan for about 1 to 1.5 minutes on each side.

Transfer the seared chuck roast into an Instant Pot.

Add 1 pound of sliced mushrooms to the Instant Pot.

Add the broth mixture with onions to the Instant Pot.

Strain the remaining liquid through a strainer to get beef juice for gravy.

Prepare mashed potatoes.

Bring the beef juice to a boil, then reduce to a low simmer, ensuring no clumps.

While stirring the beef juice, slowly pour in the cornstarch slurry until desired thickness.

Tips
