18Whisk the eggs in one bowl.
19Cut your chicken breasts into two thin slices so they are able to cook evenly.
20Pat dry the chicken breasts.
21Dip the chicken in the egg mixture, then into the breadcrumbs, and repeat for the next side.
22Put the breaded chicken in some olive oil in a pan and let them fry on each side for 4 minutes on medium-high heat until they have a golden brown crust.
23Drain the cooked chicken from any excess oil.
24Lay the chicken out on a chopping board and cut them up to get ready to plate.
25Plate the pasta in a bowl using tongs.
26Top the pasta with the sliced crispy chicken.
27Grate some more fresh parmesan cheese and add a little bit of parsley on top.
