Add about one tablespoon of salt to a bowl.

Add about one tablespoon of black pepper.

Add about one tablespoon of garlic granules.

Add about one tablespoon of dried thyme.

Add a dash of paprika or chili powder.

Add crushed chilies (scotch bonnet flakes).

Add about one tablespoon of allspice (ground pimento).

Mix all the ingredients together.

Add fresh pimento to enhance flavors.

Add fresh thyme.

Mix thoroughly until combined.

Transfer the jerk rub into a seasoning jar using a funnel.

Tips
Use both jerk rub and jerk marinade for a more authentic flavor.
Crushed chilies can be used as an alternative to scotch bonnet flakes if not available.
