1Mix together yeast mixture (0.5 cup warm water, 2.5 tsp active yeast, 1 tbsp sugar) and let it rest for 10 minutes.
2In a separate bowl, add 3 cups AP flour, 2 eggs + 1 egg yolk (whisked), 4 tbsp melted butter, 1 tsp kosher salt, and the yeast mixture. Mix until it resembles a rough dough.
3Add the dough to a lightly floured surface and knead for 8-10 minutes until smooth.
4Place the dough in a lightly floured bowl, cover, and let it rest for 1.5-2 hours or until doubled in size.
5Punch down the dough and add it to a lightly floured surface again.
6Roll out the dough to about 1/2 inch thick.
7Add the filling (1 cup packed brown sugar, 1 tbsp cinnamon, a dash of nutmeg, 0.125 tsp ground cloves, 0.33 cup room temp butter) and spread evenly.
8Roll the dough tightly, cut into uniform rolls, and place them in a baking pan.
9Let the rolls rest for 30 minutes.
10Add about 1 tbsp of heavy cream on top of each roll.
11Bake at 350 for about 25-30 minutes.
12Take them out of the oven and add frosting (4 oz cream cheese, 3 tbsp unsalted butter, 1 tsp vanilla, 2 cups powdered sugar, coffee creamer, French vanilla).
