1In a stand mixer, combine warm water, active dry yeast, honey, and melted butter. Let sit for 5-10 minutes until frothy.
2Add salt and 4 1/2 cups of flour. Mix until well combined. You may need to add more or less flour depending on the humidity.
3If using a stand mixer, continue kneading until the dough pulls away from the sides. If kneading by hand, knead for about 5 minutes until the dough pulls away from the sides.
4Place the dough in a greased bowl, cover with saran wrap and a tea towel, and let rise for 1 hour and a half.
5Grease two loaf pans and line them with parchment paper.
6Once the dough has doubled in size, divide it into two halves.
7Shape each half into a loaf and place them in the prepared loaf pans.
8Cover the loaf pans with saran wrap and tea towel, and let rise for about an hour until doubled again.
9Bake at 350°F (175°C) on the middle rack for 20-30 minutes.
10Once baked, brush the top of each loaf with butter.
11Let cool in the pans for about 20 minutes before slicing.
