Directions

  1. 1In a small mixing bowl, combine one cup of flour, half a teaspoon of baking soda, and a dash of salt.
  2. 2Whisk the dry ingredients together and set aside.
  3. 3In a large mixing bowl, add one cup of brown sugar and three eggs.
  4. 4Whisk the sugar and eggs together until nice and syrupy.
  5. 5Add three-quarter cup of vegetable oil and two teaspoons of vanilla extract.
  6. 6Whisk the mixture again.
  7. 7Add half a cup (4 ounces) of room temperature brewed coffee.
  8. 8Add half a cup of cocoa and mix one more time.
  9. 9Once the mixture looks consistent, add the reserved flour mixture and mix it all together.
  10. 10Gently fold in three-quarter cup of chocolate chips; mini chocolate chips are recommended.
  11. 11Line a loaf pan with parchment paper.
  12. 12Pour the cake batter into the prepared loaf pan.
  13. 13Bake in the oven at 325 degrees Fahrenheit for approximately 55 minutes (it may take up to an hour).
  14. 14Let the loaf sit for 5 to 10 minutes after baking before removing it from the pan.
