Directions

  1. 1Combine 1 tablespoon of water and 1/2 tablespoon cornstarch in a small dish and set aside.
  2. 2In a medium saucepan, bring sugar, strawberries, and lemon juice to a boil.
  3. 3Reduce heat and simmer for about 10 minutes, stirring occasionally. While simmering, smash the strawberries really well.
  4. 4Add water and cornstarch mixture and mix to combine for about 2 minutes. Turn off heat and set aside to cool.
  5. 5Preheat oven to 375°F and line 2 baking sheets with parchment paper.
  6. 6In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  7. 7Add the egg yolk and vanilla. Mix until combined. Set aside.
  8. 8Sprinkle some flour and roll out the puff pastry sheets to flatten the creases.
  9. 9Cut each puff pastry sheet into 4 squares and place them on the baking sheets.
