Clean fresh shiitake mushrooms with a brush and cut off the stems.

Place the cleaned mushrooms in a Dutch oven and cover with filtered water. Add an extra inch of water above the mushrooms.

Bring to a boil, then reduce heat and let simmer for about two hours.

Strain the mushrooms from the broth and set them aside.

In a second pot, cover the mushrooms with water and boil for approximately two hours. This creates a second mushroom broth.

Pour the mushroom broth from the second pot into the first pot. This combines the two broths.

Let the combined broth boil down until about three quarters of the liquid remains.

In a blender, blend the dried shiitake mushrooms into a powder.

Spread the mushroom extract on a baking sheet lined with parchment paper and dehydrate in the oven until completely crumbly.

Once cooled, blend the dehydrated mushroom mixture into a powder. Add salt until it's as salty as desired.
