Bún bò xào

Directions

  1. 1Combine 100ml of Sếp và Quốc fish sauce, 400ml of filtered water, 50ml of vinegar (rice or apple, 4-7% concentration), and 100g of sugar in a pot.
  2. 2Bring the mixture to a boil on the stove, then reduce the heat and simmer for exactly 2 minutes.
  3. 3Turn off the heat and let the fish sauce cool completely in a bowl; do not skim the foam that rises during cooking.
  4. 4Add chili and garlic to the cooled fish sauce mixture, adjusting the amount to taste.
  5. 5Squeeze about 10g of lemon juice into the fish sauce to balance the flavors.
  6. 6Slice 50g of onion thinly into wedges.
  7. 7Crush and finely chop two cloves of garlic.
  8. 8Combine 100g of soft beef with the chopped garlic and about 1/8 teaspoon of pepper.
  9. 9Add one ladle of the prepared fish sauce to the beef and mix well for about 30 seconds to allow the marinade to penetrate.
  10. 10Heat a pan over high heat, then add the marinated beef and sliced onions and stir-fry until cooked through.
  11. 11Remove the cooked beef from the pan.
  12. 12Arrange a portion of vermicelli noodles in a bowl.
  13. 13Add shredded cucumber, bean sprouts, various aromatic herbs (perilla, fish mint, basil, mint), and chopped lettuce to the bowl.
  14. 14Place the stir-fried beef and pickled vegetables (đồ chua) on top of the noodles and vegetables.
  15. 15Pour a generous amount of the prepared fish sauce over the bún bò xào.
  16. 16Garnish with roasted peanuts and fried shallots.
  17. 17Mix all ingredients thoroughly before eating.
