Dice the red onion.

Chop the Thai chilies.

Add black peppercorns, garlic, and sugar to a large zip-lock bag.

Push out any air and seal the bag.

Smash the contents of the bag with a mallet.

Add the smashed garlic mixture to a container.

Add the diced onions and chopped Thai chilies to the container.

Transfer the ingredients to a bigger container.

Add whole Thai chilies to the container.

Pour in fish sauce.

Add vanilla extract.

Pour in vinegar.

Give it a good mix.

Put a lid on the container.

Let it marinate for at least three days, or a week for better flavor.

Serve the spiced vinegar.

Tips
The sugar absorbs any garlic oil that comes out.
Don't worry if there are whole peppercorns, it gives it character.
Let it marinate for at least three days, but it's better if you give it a week.
