Lemongrass Hot Honey Chicken

Directions

  1. 1Mix two parts self-raising flour with one part cornflour, chicken powder, paprika, ginger, garlic, onion powder, and a little bit of yum yum.
  2. 2Set the flour mixture aside.
  3. 3Blend onion, garlic, and ice cold water to make onion water.
  4. 4Add the onion water to the skin-on chicken thigh.
  5. 5Add a couple of spoons of the seasoned flour to the chicken.
  6. 6Add baking soda, Chinsu fish sauce, and Chinsu hot sauce to the chicken.
  7. 7Mix everything into the chicken.
  8. 8Take the chicken and put it into the seasoned flour, ensuring it's evenly covered.
  9. 9Squeeze the chicken to get the flour into every single crack for craggly bits.
  10. 10Fry the chicken, trying not to move it until it's hardened.
  11. 11Once the chicken is ready, take it out and let it drain.
  12. 12In your wok, add lemongrass, chili flakes, and a splash of oil.
  13. 13Add honey, corn syrup, and more hot sauce to the wok.
  14. 14Add kaffir lime leaves to the wok and heat it up.
  15. 15Serve the hot honey lemongrass chicken.
