Directions

  1. 1Break apart some super firm tofu into bite-sized chunks.
  2. 2Whip up a marinade with some vegan yogurt and spices, including garlic and ginger.
  3. 3Toss the tofu in the marinade.
  4. 4Pan sear the marinated tofu until it's got some good color. Reserve for later.
  5. 5Add in some vegan butter and onions to the pan and cook for a bit.
  6. 6Add in some garlic and most of the same spices used before.
  7. 7Toast the spices for a little bit.
  8. 8Add in some tomato sauce (fresh, canned, or passata).
  9. 9Add in some cashews and simmer the mixture for a bit.
  10. 10You can keep the mixture chunky or blend it up with an immersion blender or high-speed blender.
  11. 11Add the mixture back to the pan along with a little vegan milk or cream and a little more vegan butter.
  12. 12Add water as needed to get it to your desired thickness.
  13. 13Add in the reserved tofu.
  14. 14Season to taste.
  15. 15Serve with rice and enjoy.

Tips

  • You can use fresh garlic and ginger or the stuff in a tube or even the ground stuff. All are great.
  • You can use fresh tomatoes or canned for the tomato sauce; passata is an easy option.
  • You can keep the cashew mixture chunky or blend it with an immersion blender or high-speed blender.
  • Add water as needed to get the desired thickness for the sauce.
  • Season to taste.
