Xanthan Gum Sauce Thickener

Directions

  1. 1Heat 2 liters of water in a pan to 40°C (104°F).
  2. 2Add 5 grams of xanthan gum to the warm water.
  3. 3Whisk or blend the xanthan gum into the water until it forms a thickened mixture.
  4. 4To thicken a sauce, take some of the xanthan gum mixture using a ladle.
  5. 5Add the xanthan gum mixture to the sauce that needs thickening (shown here with a yellow sauce) and blend until the desired consistency is achieved.
  6. 6For a split sauce, add the xanthan gum mixture and stick blend until it comes back together.
