Heat 2 liters of water in a pan to 40°C (104°F).

Add 5 grams of xanthan gum to the warm water.

Whisk or blend the xanthan gum into the water until it forms a thickened mixture.

To thicken a sauce, take some of the xanthan gum mixture using a ladle.

Add the xanthan gum mixture to the sauce that needs thickening (shown here with a yellow sauce) and blend until the desired consistency is achieved.

For a split sauce, add the xanthan gum mixture and stick blend until it comes back together.
