1Cut tomatoes in half and then continue to cut into smaller wedges.
2Place your cut tomatoes into a bowl and in between layers of tomatoes sprinkle salt.
3Let tomatoes sit as you prepare your jars.
4Add basil leaves to the bowl of cut tomatoes.
5Fill your jars with tomatoes, pressing down with your wooden spoon. Do not add water; tomatoes only. Add your basil, as much as you like.
6Seal the jars.
7Place a kitchen towel at the bottom of a large pot to avoid direct contact with heat to prevent breakage.
8Place the sealed jars in the pot.
9Fill the pot with water, ensuring the jars are covered.
10Boil for twenty minutes. Let sit for a couple of hours.
11When you remove the jars, put them upside down. Cover them and the next morning you can store them in your pantry or a cool room and they are ready to enjoy!
