Caramelized Onion & Garlic Spaghetti

Directions

  1. 1Heat butter and olive oil in a large skillet over medium heat.
  2. 2Add in the thinly sliced onions and let them caramelize for 15-20 minutes, stirring occasionally, until golden and jammy.
  3. 3While onions are caramelizing, boil a pot of salted water and cook the pasta until al dente.
  4. 4Drain the pasta, reserving some of the pasta water.
  5. 5Once onions are deeply golden, stir in minced garlic and all the seasonings (paprika, garlic powder, salt, pepper, Italian seasoning).
  6. 6Let it all bloom for a minute, then add the chili crisp and sauté for another minute.
  7. 7Pour in the room temperature cream or coconut milk.
  8. 8Let the sauce simmer for a few minutes.
  9. 9Add the grated Parmesan cheese and stir until combined.
  10. 10Add the cooked pasta to the sauce and toss to coat.
  11. 11Use reserved pasta water to loosen the sauce to a silky consistency if it's too thick.
