Directions

  1. 1In a bowl, add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika. Mix well.
  2. 2Air fry or oven bake the potatoes at 200°C/400°F for 20-25 minutes (air fryer) or 30-35 minutes (oven), flipping halfway.
  3. 3While potatoes are baking, cook diced onions in a pan until they have some color.
  4. 4Add extra lean beef mince to the pan with the onions.
  5. 5Add Worcestershire sauce and the same seasonings used for the potatoes to the beef mince.
  6. 6Once the beef is nearly cooked, add tomato paste and diced garlic. Mix and cook through.
  7. 7In a bowl, mix eggs and blended cottage cheese.
  8. 8Cook the egg mixture on low-medium heat, mixing gently every minute or so, until cooked perfectly and fluffy. Season with salt and pepper.
  9. 9Warm a tortilla, evenly distribute the eggs, mince, and potatoes onto it. Top with Sriracha mayonnaise and chives.
  10. 10Roll up the tortilla, toast it, and repeat for the remaining burritos.

  • 80 g tomato paste
  • 4 diced garlic cloves
  • 15 eggs
  • 100 g blended cottage cheese
  • 10 large tortillas
  • 25 g Sriracha mayonnaise
