Directions

  1. 1Trim the prime rib to remove the bone.
  2. 2Prepare the rib marinade by pureeing garlic, black garlic, kji, and mustard.
  3. 3Marinate the prime rib with the rib marinade for at least two to three days.
  4. 4Put the bone back in the prime rib and tie it.
  5. 5Marinate the other side of the tied prime rib and let it sit for one day.
  6. 6Make the dry rub by blending peppercorn, brown sugar, black peppercorn, pink peppercorn, green central peppercorn, and white peppercorn.
  7. 7Apply the dry rub to the prime rib.
  8. 8Cure the prime rib with the dry rub for one more day in the refrigerator.
  9. 9Cook the prime rib in the oven.
  10. 10Sear the prime rib using smoking hot beef fat to create a nice crust.
