Melt butter in a large skillet.

Add sliced onions to the skillet.

Season with salt, pepper, and fresh thyme.

Cook the onions until nice and caramelized.

Add garlic and red wine, scraping up all the fond from the bottom of the pan.

Season diced chicken breast with herbs and spices.

Sear the chicken in melted butter for a few minutes until it gets some color, but is not fully cooked.

Place the par-cooked chicken in a bowl.

Toast the rice in some melted butter for a minute.

Add beef broth and creamy Carnation evaporated milk.

Cover and cook for 10 minutes.

Stir in the caramelized onions and the chicken.

Stir in shredded Gruy mere cheese.
