French Onion Chicken and Rice Skillet

Directions

  1. 1Melt butter in a large skillet.
  2. 2Add sliced onions to the skillet.
  3. 3Season with salt, pepper, and fresh thyme.
  4. 4Cook the onions until nice and caramelized.
  5. 5Add garlic and red wine, scraping up all the fond from the bottom of the pan.
  6. 6Season diced chicken breast with herbs and spices.
  7. 7Sear the chicken in melted butter for a few minutes until it gets some color, but is not fully cooked.
  8. 8Place the par-cooked chicken in a bowl.
  9. 9Toast the rice in some melted butter for a minute.
  10. 10Add beef broth and creamy Carnation evaporated milk.
  11. 11Cover and cook for 10 minutes.
  12. 12Stir in the caramelized onions and the chicken.
  13. 13Cover and cook for another 10 minutes.
  14. 14Stir in shredded Gruy mere cheese.
  15. 15Taste and adjust seasonings.
  16. 16Sprinkle more Gruy mere cheese over the top.
  17. 17Place under the broiler until the cheese is nice and bubbly.
  18. 18Serve with your favorite garlic toast for the perfect bite.
