Caramelize the onions in the butter in a large pot. Stir every 20 minutes or so.

Deglaze the bottom with sherry or cooking wine and scrape up all the fond.

Add spices and stock, then stir together.

Taste and adjust seasoning as desired.

Let it come back up to a boil for 10-15 minutes.

Top with croutons and shredded gruyere cheese.

Broil for 1-2 minutes until the cheese is melted.

6 Tbsp Butter
6 Sliced Onions
0.25 Cup Sherry (Cooking wine)
3 sprigs Thyme
0.5 Tbsp dried thyme
2 Bay Leaves
to TASTE Salt
to TASTE Pepper
3 Tbsp Worchestershire
1 Liter/Qt Beef Stock
Croutons (or toast bread with oil)
Gruyère cheese

Tips
Make in a large batch because it takes a while and freezes/reheats really well.
Let the onions sit as you watch a movie, stirring every 20 minutes or so to caramelize them.
