French Onion Soup

Directions

  1. 1Caramelize the onions in the butter in a large pot. Stir every 20 minutes or so.
  2. 2Deglaze the bottom with sherry or cooking wine and scrape up all the fond.
  3. 3Add spices and stock, then stir together.
  4. 4Taste and adjust seasoning as desired.
  5. 5Let it come back up to a boil for 10-15 minutes.
  6. 6Top with croutons and shredded gruyere cheese.
  7. 7Broil for 1-2 minutes until the cheese is melted.

Ingredients

  • 6 Tbsp Butter
  • 6 Sliced Onions
  • 0.25 Cup Sherry (Cooking wine)
  • 3 sprigs Thyme
  • 0.5 Tbsp dried thyme
  • 2 Bay Leaves
  • to TASTE Salt
  • to TASTE Pepper
  • 3 Tbsp Worchestershire
  • 1 Liter/Qt Beef Stock
  • Croutons (or toast bread with oil)
  • Gruyère cheese

Tips

  • Make in a large batch because it takes a while and freezes/reheats really well.
  • Let the onions sit as you watch a movie, stirring every 20 minutes or so to caramelize them.
