Special Fried Rice

Directions

  1. 1Add oil to a pan on medium-high heat and allow to heat up slightly.
  2. 2Pour the washed rice into the pot and begin stir-frying.
  3. 3Toast up the rice till it is nice and brown.
  4. 4Add water or stock, seasoning cubes, curry powder, turmeric, salt and all purpose marinade.
  5. 5Mix everything together to combine, then cover the pan and allow to cook till the rice is tender.
  6. 6Fluff the rice with your cooking spoon and then mix everything together to combine.
  7. 7Scoop out the rice from the pot and set aside.
  8. 8Drizzle some more oil and then add the chicken breast pieces.
  9. 9Season with just some salt, then begin stir-frying until the chicken pieces have lost all of its pinkness and is slightly brown.
  10. 10Take out of the pan and set aside.
  11. 11Add some onions and stir-fry for a few seconds before adding the garlic paste and the chopped fresh peppers.
  12. 12Continue to stir-fry for a few more seconds.
  13. 13Add carrots and stir-fry again for another one minute before adding the seasonings: cumin powder, curry and thyme, garlic powder, seasoning cubes, salt, and ketchup.
  14. 14Mix everything together to combine.
  15. 15Add the cooked chicken pieces back into the pot.
  16. 16Add fully cooked rice.
  17. 17Mix everything together to combine.
  18. 18Add cabbage, bell peppers, frozen peas and sweet corn.
  19. 19Mix everything together to combine.
  20. 20Cover the pot one final time and leave to steam for two to three more minutes.
  21. 21Stir again one last time and take off the heat immediately.
  22. 22Serve and enjoy.
