Tomato Bacon Jam

Directions

  1. 1Chop the beef bacon.
  2. 2Core and chop the tomatoes.
  3. 3Dice the onion.
  4. 4Cook the chopped bacon in a large saucepan or Dutch oven over medium heat until crispy.
  5. 5Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.
  6. 6Add the diced onions to the bacon fat and cook until soft and translucent.
  7. 7Add the chopped tomatoes, brown sugar, lemon zest, lemon juice, maple syrup, garlic, spices, balsamic vinegar, and salt to the pan.
  8. 8Cook the mixture down low and slow until it is thick and jammy.
  9. 9Add the crispy bacon back into the jam.
  10. 10Let the jam cool slightly, then transfer to a jar.

  • 10 oz Smoked thick-cut beef bacon, chopped
  • 3 lbs Ripe tomatoes, cored and chopped
  • 1 Small onion, diced
  • 0.5 cup Brown sugar
  • 1 lemon Lemon zest and juice
  • 0.25 cup Maple syrup
  • 2 tsp Salt
  • 2 tbsp Balsamic vinegar
  • 2 tsp Smoked paprika
  • 2 tsp Chinese five spice
  • 0.25 tsp Cayenne pepper
  • Garlic
  • Spices

Tips

  • You can literally put this jam on everything.
  • Store in the fridge for up to 2 weeks, or freeze for longer storage.
