2Season the salmon with sofrito, chili powder, smoked paprika, garlic powder, black pepper, Old Bay seasoning, spicy brown mustard, jerk sauce, and lime or lemon squeeze.
3Add a bit of olive oil to a pan and place the salmon skin-side down.
4Cook the salmon on both sides for about 4-5 minutes on each side.
5After salmon is cooked, add honey.
6Then add in your special salmon sauce mixture (1.5 cups of water, 1/3 cup of soy sauce, 3-4 tbsps of red chili flakes, fresh parsley or parsley flakes, Mike's Hot Honey, honey, Tabasco or any hot sauce) and let it cook for 5 minutes.
7Dice up the mangoes, tomatoes, jalapeños, green peppers, orange peppers, red onion, and cilantro for the mango salsa.
8Mix the diced ingredients with lime squeeze, lemon juice, a tiny bit of olive oil, salt, pepper, garlic powder, and sugar.
9Serve the sweet chili salmon over white rice and top with mango salsa.
