Prepare the seafood: poach prawns in salted water, boil octopus until tender, coat fish in cornstarch and fry until golden and crispy.

Heat oil in a pan and fry onions until softened. Add garlic and cook for 30 seconds.

Stir in mustard seeds until they pop, then add Vindaye Spice Mix and stir for 30 seconds.

Toss in cooked seafood, green chillies, salt, sugar, and vinegar. Stir until combined.

Taste and adjust seasoning. Let cool before transferring to a container.

Serve cold with a fresh baguette.

2 tbsp vegetable oil
1 large onion, sliced
5 garlic cloves, sliced
1 tbsp mustard seeds
1 Vindaye Spice Mix
300 g octopus tentacle, cooked, sliced
300 g prawn tails, cooked
300 g white fish fillets, chopped, fried
3 green chillies, sliced
1 tsp salt
2 tsp sugar
3 tbsp white vinegar
