Mauritian Seafood Vindaye

Directions

  1. 1Prepare the seafood: poach prawns in salted water, boil octopus until tender, coat fish in cornstarch and fry until golden and crispy.
  2. 2Heat oil in a pan and fry onions until softened. Add garlic and cook for 30 seconds.
  3. 3Stir in mustard seeds until they pop, then add Vindaye Spice Mix and stir for 30 seconds.
  4. 4Toss in cooked seafood, green chillies, salt, sugar, and vinegar. Stir until combined.
  5. 5Taste and adjust seasoning. Let cool before transferring to a container.
  6. 6Serve cold with a fresh baguette.

  • 1 tbsp mustard seeds
  • 1 Vindaye Spice Mix
  • 300 g octopus tentacle, cooked, sliced
  • 300 g prawn tails, cooked
  • 300 g white fish fillets, chopped, fried
  • 3 green chillies, sliced
  • 1 tsp salt
  • 2 tsp sugar
  • 3 tbsp white vinegar
