1Fry the cloves, black cardamom, cinnamon, star anise, coriander seeds, black pepper, fennel seeds, and bay leaves for 4 minutes on low flame.
2Take the fried spices aside.
3Let the fried spices cool.
4Grind the cooled spices into a fine powder (this is the grinded garam masala).
5Grind nutmeg, cardamom, and mace into a fine powder.
6Mix the grinded nutmeg, cardamom, and mace powder with the grinded garam masala.
7Add 1 tsp of turmeric powder to the mixed masalas.
8Add salt to taste to the mixed masalas.
9Add 2 tbsp of red chilli powder to the mixed masalas.
10Marinate 1 kg of raw chicken (each piece approximately 100gms) with all the prepared powders (grinded garam masala, grinded masala powder, turmeric powder, red chilli powder, salt).
11Add 1 tsp of shahjeera to the chicken marination.
12Add 10 cloves to the chicken marination.
13Add 2 inches of cinnamon to the chicken marination.
