Tofu Paper Noodles

Directions

  1. 1Roll up the tofu paper and chop it into a similar size as tagliatelle pasta.
  2. 2Boil the chopped tofu paper for about 4 minutes.
  3. 3For the sauce, mix light soy sauce, dark soy sauce, rice vinegar, gochujang, honey, garlic, and ginger.
  4. 4Pour the sauce mixture into boiling chicken stock.
  5. 5After a couple of minutes, add some peanut butter for creaminess, flavor, and to thicken the sauce.
  6. 6Once the desired consistency is reached, add the cooked tofu paper into the sauce.
  7. 7Once the noodles are fully coated, serve them up with a touch of sesame oil, sesame seeds, and chili crisp.

  • 130 g Tofu paper
  • 2 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp Gochujang
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 garlic clove
  • Grated ginger
  • 15 g peanut butter
  • 150 ml chicken stock
  • touch sesame oil
  • sesame seeds
  • chili crisp

Tips

  • Tofu paper doesn't really taste of anything, so it takes on the flavor of the sauce nicely.
  • Tofu paper has a firm, chewy texture compared to normal noodles.
  • You can add other protein or veggies to make it a full, well-rounded meal.
  • Tofu paper is a good substitute for noodles or pasta, especially for vegetarians.
