Roll up the tofu paper and chop it into a similar size as tagliatelle pasta.

Boil the chopped tofu paper for about 4 minutes.

For the sauce, mix light soy sauce, dark soy sauce, rice vinegar, gochujang, honey, garlic, and ginger.

Pour the sauce mixture into boiling chicken stock.

After a couple of minutes, add some peanut butter for creaminess, flavor, and to thicken the sauce.

Once the desired consistency is reached, add the cooked tofu paper into the sauce.

Once the noodles are fully coated, serve them up with a touch of sesame oil, sesame seeds, and chili crisp.

1 tsp honey
1 garlic clove
Grated ginger
15 g peanut butter
150 ml chicken stock

Tips
Tofu paper doesn't really taste of anything, so it takes on the flavor of the sauce nicely.
Tofu paper has a firm, chewy texture compared to normal noodles.
You can add other protein or veggies to make it a full, well-rounded meal.
Tofu paper is a good substitute for noodles or pasta, especially for vegetarians.
