Chicken Chorizo Skillet

Directions

  1. 1Add diced onion and beef chorizo to a pan.
  2. 2Cook for about five minutes until onions are soft and chorizo is browned.
  3. 3Add bite-sized chunks of chicken breast to the pan.
  4. 4Add salt, pepper, smoked paprika and cajun seasoning.
  5. 5Fry chicken down with chorizo for about four or five minutes, it doesn't need to be cooked all the way through right now.
  6. 6Add garlic powder.
  7. 7Add tomato paste and cook it down for another two or three minutes.
  8. 8Add long grain rice.
  9. 9Make sure rice is coated with all the flavor.
  10. 10Add chicken stock.
  11. 11Cover and put down on a simmer.
  12. 12Cook for about 20 minutes then uncover it and let it go another five or ten minutes until that rice is done and most of that liquid is cooked off.
  13. 13Cut the heat.
  14. 14Put shredded cheddar jack cheese over the top, cover it back up and let it sit for about five minutes and let that cheese melt.

  • 9 ounces beef chorizo
  • 1.5 pound chicken breast
  • salt
  • pepper
  • smoked paprika
  • cajun seasoning
  • garlic powder
  • 0.5 tube tomato paste
  • 1.5 cup long grain rice
  • 3 cups chicken stock
  • couple handfuls shredded cheddar jack cheese

Tips

  • Do not drain the chorizo because you want the grease in there.
  • Toss the chicken with seasonings before you put it in the pan or just season it in the pan.
  • If you don't have minced garlic or garlic powder, just skip it because the cajun seasoning has plenty of flavor in it.
