Add diced onion and beef chorizo to a pan.

Cook for about five minutes until onions are soft and chorizo is browned.

Add bite-sized chunks of chicken breast to the pan.

Add salt, pepper, smoked paprika and cajun seasoning.

Fry chicken down with chorizo for about four or five minutes, it doesn't need to be cooked all the way through right now.

Add garlic powder.

Add tomato paste and cook it down for another two or three minutes.

Add long grain rice.

Make sure rice is coated with all the flavor.

Add chicken stock.

Cover and put down on a simmer.

Cook for about 20 minutes then uncover it and let it go another five or ten minutes until that rice is done and most of that liquid is cooked off.

Cut the heat.

Put shredded cheddar jack cheese over the top, cover it back up and let it sit for about five minutes and let that cheese melt.

garlic powder
0.5 tube tomato paste
1.5 cup long grain rice
3 cups chicken stock
couple handfuls shredded cheddar jack cheese

Tips
Do not drain the chorizo because you want the grease in there.
Toss the chicken with seasonings before you put it in the pan or just season it in the pan.
If you don't have minced garlic or garlic powder, just skip it because the cajun seasoning has plenty of flavor in it.
