Swedish Meatballs

Directions

  1. 1Pour bread crumbs and milk into a bowl and mix until combined.
  2. 2Peel and finely chop the onion.
  3. 3Melt butter in a pan over medium heat.
  4. 4Add the chopped onion to the pan and cook until caramelized.
  5. 5Transfer pork and beef mince to a large bowl.
  6. 6Add the egg, caramelized onions, garlic paste, salt, and pepper to the mince mixture.
  7. 7Mix all ingredients thoroughly with your hands.
  8. 8Form the mixture into small meatballs and place them on a baking tray.
  9. 9Chill the meatballs in the fridge.
  10. 10Peel and cut the potatoes into chunks.
  11. 11Rinse the potatoes under cold water.
  12. 12Place potatoes in a pot, cover with water, and add salt.
  13. 13Bring to a boil and cook until tender.
  14. 14Slice cucumber thinly using a mandoline.
  15. 15Place sliced cucumbers into a jar.
  16. 16Chop fresh dill.
  17. 17Mix white vinegar, sugar, and chopped dill in a container.
  18. 18Pour the mixture over the cucumbers in the jar.
  19. 19Seal the jar with a lid and shake gently to combine, then refrigerate.
  20. 20Add lingonberries, sugar, and red wine to a saucepan.
  21. 21Cook the lingonberry mixture until it thickens into a jam-like consistency.
  22. 22Heat olive oil in a pan.
  23. 23Brown the meatballs in the pan, then remove them.
  24. 24Add butter and flour to the pan to make a roux, stirring until browned.

  34. 34Stir the mashed potatoes until creamy.
  35. 35Serve the mashed potatoes, creating a well in the center.
  36. 36Place the sauced meatballs into the well of mashed potatoes.
  37. 37Add a dollop of lingonberry jam and a side of pickled cucumbers.
  38. 38Drizzle extra gravy over the meatballs and garnish with fresh dill.
