1Prepare the chicken drumsticks by making slashes and cutting the tendon, with or without skin.
2Place the prepared chicken drumsticks into a bowl.
3Season the chicken with chili powder, turmeric powder, fennel powder, garam masala powder, coriander powder, paprika powder, cracked black peppercorns, and salt.
4Add lemon juice to the chicken and spices.
5Coat the chicken well with the marinade.
6In a grinder jar, add sliced shallots, sliced ginger, peeled garlic cloves, and green chilies.
7Close the lid and grind the ingredients coarsely.
8Add the coarsely ground mixture to the chicken.
9Add rice flour and corn flour to the chicken mixture.
10Crack two eggs into the mixture.
11Mix well to coat the chicken thoroughly.
12Add the marinated drumsticks into medium hot oil in a pan.
13Fry for a couple of minutes, then flip them over.
14Add fresh curry leaves and continue frying the chicken for about 3 to 4 minutes on a medium flame, ensuring not to overcrowd the pan.
15Ensure the chicken is thoroughly cooked from all sides.
16Once thoroughly cooked, remove the drumsticks from the pan.
