Grab an onion and two and a half sausage links.

Slice the smoked sausages and chop up the onion.

Add a little oil to a hot pan and sauté the sliced sausages and chopped onion until nice and browned.

Grab around five-ish pounds of russet potatoes, peel them, and slice them.

Throw the sliced potatoes into your crockpot.

Once the onions and sausage are browned, add a big old scoop of minced garlic to the pan and then add the mixture to the crockpot.

Add a packet of onion soup mix to the crockpot and stir it up really well.

Add half a stick of butter on top of the ingredients in the crockpot.

Cook on high for around three-ish hours until the potatoes are nice and tender.

Once cooked, top with about two cups of Colby Jack cheese.

Cover the crockpot until the cheese is nice and melted.

Add some chives to the top.

Add a little sour cream on top.

0.5 stick butter
2 cups Colby Jack cheese
