Crockpot Potatoes and Sausage

Directions

  1. 1Grab an onion and two and a half sausage links.
  2. 2Slice the smoked sausages and chop up the onion.
  3. 3Add a little oil to a hot pan and sauté the sliced sausages and chopped onion until nice and browned.
  4. 4Grab around five-ish pounds of russet potatoes, peel them, and slice them.
  5. 5Throw the sliced potatoes into your crockpot.
  6. 6Once the onions and sausage are browned, add a big old scoop of minced garlic to the pan and then add the mixture to the crockpot.
  7. 7Add a packet of onion soup mix to the crockpot and stir it up really well.
  8. 8Add half a stick of butter on top of the ingredients in the crockpot.
  9. 9Cook on high for around three-ish hours until the potatoes are nice and tender.
  10. 10Once cooked, top with about two cups of Colby Jack cheese.
  11. 11Cover the crockpot until the cheese is nice and melted.
  12. 12Add some chives to the top.
  13. 13Add a little sour cream on top.
