1Take a chicken breast, slice it in half and cut it into small pieces.
2Do the same with veal cutlets and keep that in a bowl.
3For the marinade, coarsely chop half a red onion, half a red pepper, two cloves of garlic, a little green pepper, a few sprigs of parsley, 100g of tomato sauce, a little water, sunflower oil, smoked paprika, Worcestershire sauce, salt and pepper.
4Mix all that well and your little marinade is ready.
5Then put your pieces of meat in a dish and cover them with your homemade marinade.
6Mix well and let marinate.
7For the sauce, prepare a mayonnaise with an egg yolk, a spoonful of mustard and a little vinegar.
8Mix your mixture with a whisk, incorporating sunflower oil, and once your mayo is nice and thick, add two tablespoons of cottage cheese, chopped chives, the juice of half a lemon, a spoonful of harissa, mix well and set aside in the fridge.
9Once your meat has marinated well, prepare mini kebab skewers with barbecue sticks.
10Insert the meat, being careful not to hurt yourself, and try to alternate between the chicken and the veal.
11Cover your mini skewers with the rest of the marinade and bake at 160 degrees for 40 minutes.
12Just grab a nice pancake, add the garnish of your choice, put your kebab skewers nicely grilled and hot on top.
13Add a little touch of your homemade sauce to finish and that's the job.
