1Slice chicken breast into small cubes. Add all the seasonings with chopped parsley and olive oil. Mix well until the colour changes, set aside.
2Line a large sheet pan with baking paper, add cubed potatoes, chopped red onion, chopped garlic cloves, extra seasoning and go heavy with cooking spray. Mix until well coated!
3Oven roast for 20 mins at 200C/400F until slightly crispy golden.
4Now spread marinated chicken evenly over the potatoes. Add cooking spray, then back in oven for 25 mins until golden and juicy.
5Once cooked, while the pan is still hot, add BBQ sauce, cheddar and mozzarella then mix and fold gently until melted and cheesy.
6Garnish then divide into 8 equal portions and ENJOY!
