Two Ingredient Mozzarella Cheese

Directions

  1. 1Put a whole gallon of milk in a pot and put it on medium heat until it hits 120 degrees, making sure to stir continuously.
  2. 2Cut the heat and add just under one cup of vinegar, stirring really well for about 30 seconds until it curdles.
  3. 3Put the lid on and let it cool off for about 15 minutes.
  4. 4After it has set for 15 minutes, get all the curd out with a spoon and put it into a separate bowl, or use a strainer and cheese cloth.
  5. 5If using a cheese cloth, squeeze all the whey out.
  6. 6Put the ball of curd in the microwave for 30 seconds.
  7. 7Stretch and fold the warm cheese over itself, being careful as it will be hot.
  8. 8Put it in the microwave for 30 more seconds.
  9. 9Stretch and fold the cheese again, adding about a teaspoon of salt during this process.
  10. 10Once the cheese is nice and smooth, form it into a mozzarella ball.
  11. 11Set the mozzarella ball in an ice bath for about 15 minutes until it is ready to eat.

Tips

  • Make sure you're giving the milk a continuous stir the whole time.
  • Stir the milk and vinegar really well for about 30 seconds to curdle.
  • If you don't have cheesecloth, you can just take the ball of curd and squeeze that as well with just your hands.
  • When stretching the cheese, it will be pretty hot so try not to burn yourself.
